Soft discs of fresh chenna — set, shaped, and simmered in sweetened milk until they swell and become cloud-tender — then chilled in a thickened, cardamom-scented milk sauce. The plain variety allows the pure dairy character to speak without distraction. The most refined of all Bengali sweets.
